Unicorn Confetti Cupcakes

Baking is not something I do very often (I can count 3 times here, here and here in the last 12 months). But when I do, you can guarantee it is going to be a) something sweet and b) from a baking kit and c) I’ll blog about it to prove it happened. Today is no exception, however this time I decided to get extra creative and put my own spin on the classic Vanilla Cupcake and then bring it to life with added Unicorn Confetti. 

You will need: Vanilla Cupcake Kit, 1 egg, butter, Unicorn Confetti.

Maybe one day I’ll learn how to make a cake from scratch, but for now it’s all about the baking kit. All you need to do is mix an egg and the cake mix together and bingo, step one is complete.

Great British Bake Off 2019 here I come…

If you have a cupcake tray, it is probably best to use that. I have no idea what my tin is designed for (not cupcakes) but it seemed to do the job so into the oven it went. Bake for 15-18 minutes at 170 degrees. 

Whilst the cupcakes are in the oven, part two can now begin. Things got a bit complicated at this stage as the icing needed 50g of butter and I don’t own scales – so I guesstimated and hoped for the best. I don’t think you can go far wrong though, the more creamy-sugary-deliciousness, the better.

Confession time: I never planned for the cupcakes to be so slim, it is just what happened. However, stacking two together transformed them into cupcake sandwiches and it almost looks like they were supposed to turn out like this. Plus TWO layers of tasty icing is a definite win for me.

Once the cupcake sandwiches have been iced, sprinkle on the Unicorn Confetti and bring on the colour! 

And that is how you transform the classic Vanilla Cupcake into a Unicorn Confetti sandwich! It is so quick and easy to do and they 100% passed the taste quality control test (I had to try a couple to make it fair).

    My style of baking is very much like yours. I don’t have scales and guesstimate everything! They turned out great, double decker cupcakes should definitely be a thing!

    PS I think your tray might be a small roasting tin =)

    These are sos cute! My favourite thing about baking (although I am a bake from scratch kinda gal, it’s my grandmas fault) is that as long as it tastes delicious, you really can’t go wrong with the presentation, and there is always a way of making it look cute. Like these cupcakes! I love that you’ve sandwiched them together, it’s ADORABLE. I also love, more than anything, how colourful your photography always is. It’s just the best tbh.

    Oooh la la! These cup cakes look delicious and are so tempting. I would eat them all in one go hahaha. I try not to bake because I need to avoid sugar as my family has diabetes. 🙂 But I do treat myself sometimes by purchasing ready made ones.     Oh Bexa, these look absolutely delicious and I bet they tasted amazing as well. I quite agree, quality control is very important, you can never be too sure, it’s always best to check, recheck, and check again 🙂 I would never have thought of making them into sandwiches either, that’s a great tip. And Flora would adore the unicorn toppings, I haven’t seen them before so I’ll be heading straight for the cake decorations aisle the next time we go shopping.     Well this makes me want cake 😂😍 I love a good piece of cake and these look so yummy and so cute! I am becer good with baking, I’ve only ever baked a couple of times. But this makes me want to bake more. My mum is amazing at baking, has made several wedding cakes, a huge standing dragon cake and others. So I need to watch her more closely I think haha.     These look great, sometimes a cake mix is all you need! I do a bit of both with baking…it depends what I am making. If I am making it for someone else (like my niece’s birthday cake / buns) will use a cake mix as its easier and cheaper for the amount you can make.

    These look SO cute and SO tasty! A baking kit is such a handy way of making sure you’ve got all the ingredients so no judgement here for using one – the number of times I’ve got halfway through baking a cake from scratch and realised I’m missing one key ingredient that would be included in a baking kit is just ridiculous! Turning your slightly slim cupcakes into sandwiches was an inspired idea too, I love your creativity! The end result was adorable and I’m sure everyone who tried them sung their praises!

    I tend to be a bake from scratch kinda gal, but that’s only because I’m one of those mums who always insisted on baking my daughter’s birthday cakes to what ever theme she was into at the time. My best was a chocolate Scoobie Doo cake for her 4th which really went down well. I have been known to make the odd carrot cake from a mix though. You can’t beat it for convenience. when I saw your confetti cakes I immediately thought of Easter with those gorgeous ice cream colours. Your whole set up is cute and colourful as always!     OMG Bexa, these look so cute! I don’t bake often, probably about once a year or so, haha. When I do make cakes I like to cook them from scratch so I can control how much sugar etc goes into them. I love that you improvised and made them into cupcake sandwiches, that was a great idea! They look so yummy.

    These are so cute!! They’re so simple yet pretty I love it ❤️ I used to bake cakes and cupcakes all the time when I lived at home with my parents, it was a favourite hobby of mine and I actually went to a few cake sales at fundraisers selling my own creations and that was super fun! You can never go wrong with cupcake kit though, makes its so much easier and then you know you won’t go wrong with the taste haha. Fab post as always!!

    These look yummy!! But ill have to admit packet mix cakes are my pet peeve!!! 100g sugar/self raising flour/soft butter to two eggs – easy!!! But I think they are a great start to the world of baking!
