A couple of Friday’s ago, I shared with you Make Your Own Rainbow Cake using a Bakedin Baking Kit. I was so impressed by the simplicity and tasticity (new word) of the baking kit, I went ahead and bought myself their Choc Mallow Melt Cookie Baking Kit. I love cookies, but these are no ordinary cookies… this is a cookie sandwich with double melted choc and gooey marshmallow. It’s pretty special and so easy to make. So if you have 30 minutes spare, I encourage you to give these dreamy little treats a go.
Here is how I made mine:
All you need is the Bakedin Choc Mallow Melt Cookie Kit, butter and one egg.
Bakedin really makes life easy for you by labeling each packet and providing a simple step-by-step guide. Inside the kit: cookie mix (bag 1), marshmallows (bag 2), Belgian milk chocolate chunks (bag 3), Belgian white chocolate chunks (bag 4), baking paper and a butter measure.
The Butter Me Up measuring card is perfect for those amateur bakers who do not own a pair of kitchen scales (like me).
Step 1: Line two baking trays with the baking paper provided.
Step 2: Microwave 115g of butter in a bowl for about 1 minute.
Step 3: Add the cookie mix and egg into bowl and mix well.
Step 4: Resist the urge to sample your cookie dough and pre-heat oven to 160.
Step 5: The guide suggests making 24 balls. I tried this but my balls started to expand, so I settled on making 12 larger balls/blobs. Place both trays in the oven and leave to cook for about 10 minutes. As mine were bigger, I added an extra couple of minutes baking time.
Step 6: Add marshmallows to one tray and place back into the oven for a minute. Now make your marshmallow sandwich!
Step 7: Melted chocolate time! Microwave the milk chocolate chunks for about a minute, it is impossible not to sample the delicious melted choc.
Step 8: Spread the delicious melted chocolate over the cookie marshmallow sandwiches.
Step 9: Boil the kettle and add bag 4 (white chocolate chunks) into mug of hot water and let it melt.
Step 10: Snip open the bag and decorate the top of each cookie with the white chocolate. I managed to create some kinda double chocolate marble effect. Yum!
Step 11: I added some marshmallows to the roof of the sandwich for that extra bit of deliciousness.
Step 12: Enjoy your cookie creation!
These cookies took about half an hour to make and were so simple! You don’t need to be an expert baker to get in the kitchen and make a batch of cookies with these Bakedin Kits.
